Chocolate, Cacao & Coffee in Niche Perfumery

Chocolate is one of perfumery's great traps. The word suggests sweetness before you smell anything at all. Cacao is less obedient: bitter, dusty, roasted, sometimes almost dry. Coffee brings another kind of darkness. Put the three together and a gourmand can move surprisingly far from the dessert table.

Bitter before sweet

Chocolate is only the beginning.

Chocolate often reads smoother and more immediately gourmand. Cacao can feel drier and less polished, closer to cocoa powder or the bitterness around a roasted bean. Coffee adds roast rather than sweetness of its own. The interesting perfumes give these materials something to push against: citrus, lavender, resins, woods, spice or vanilla.

Dark Chocolate

Usually the most immediately edible of the three. Herbs, resins and woods can make it feel considerably darker.

Cacao
